We picked up some fish during the weekend and I decided to cook it up last night; we never did figure out what to make with it, and as hours ticked by... I began to feel a little anxious. An easy go-to side for us has been steamed brown balsamic rice, since it's supposed to be super good for you... well, with what we've learned the past few weeks, it now leaves a lot to be desired. What to do?
Since we also picked up some bone broth {I indulged and went beef, so far my stomach hasn't fought with me about this decision} I came up with a crazy idea. I started a batch of rice. Roughly 2 hours later, I pre-heated the oven to 350 and dumped the rice into our trusty casserole dish. I added, like, 4 tablespoons of Kerry Gold butter and probably a cup of the organic beef bone broth. I mix it up, seasoned it with salt and pepper, covered it and tossed it in the oven for 15 minutes. It tasted really great, totally complimented the fish I tossed in the skillet with 2 tablespoons of butter and the best part... we were both satisfied for hours afterwards. It's sad or weird to think about how often dinner was only an hour behind us when we'd be hunting for more food. I do have some serious complaints about our salt, however, but I'll leave that for another post.
